Thai 7 Spice makes a brilliant meat rub that imparts delicate and aromatic flavours and a chili kick which bring Thai dishes to life. Try as a rub, a wet marinade in oil or lemon juice or as a seasoning blend in stir fry. Great with poultry, pork, meaty fish, vegetables and rice.
Chicken Stir Fry
1 bunch spring onions, sliced diagonally
2 tsp Thai 7 Spice
2 garlic cloves, crushed
1 tbs oil
450 g (1 lb) chicken breasts, sliced
1 red pepper, sliced
100 g (4 oz) sugar snap peas, sliced diagonally
125 g (5 oz) baby corn
1 large carrot, sliced into batons
Heat the oil and fry the chicken for 6-7 minutes, until browned. Add the vegetables and stir fry for a further 3-4 minutes. Stir in the Thai 7 Spice and the garlic and heat through for a further minute. Serve with rice or noodles.
