A very familiar herb to the British palate with few having not tasted sage in sausages and stuffings!
The warm, woodsy, faintly musky and slightly astringent flavour of Sage is the perfect companion to fatty meats like pork and rich meats like turkey, goose and duck.
Add to flavour soups, stews, stuffings, and roasted vegetables. Sage is often used in pasta sauces, and on focaccia and works brilliantly with apples,cheese, onion, tomato and spinach. Try sage butter lightly drizzled over steamed vegetables.
As a kitchen essential, Sage plays really well with Bay Leaves, Caraway, Garlic, Marjoram, Paprika, Parsley, Rosemary, Savory and Thyme. Ground sage is especially useful where only the flavour of sage is required, rather than having the texture of its' leaves.
