Piri Piri Spice Blend

Piri Piri spice is fiery blend of garlic, salt, chilli, onion, basil and cayenne pepper. It can be used to add spicy heat to meat, poultry and fish dishes. Fantastic as a marinade or dry rub for BBQing.

 

Useage Ideas
Marinade: For and easy and simple marinade, add Piri Piri (to taste,a little goes a long way), olive oil to chicken breasts. Marinade for a couple hours or overnight. Throw on the BBQ and cook slowly for extra tenderness. Serve with rice or potato wedges and salad. Fresh coriander leaves work well with this dish too.

Fiery Wedges
Super simple wedges with a coat of Piri Piri.

  • Preheat your oven to 200˚C
  • Put a large pan of water on to boil
  • Clean 500-600g of large potatoes, and with skins on cut them into wedges
  • Add to the boiling water and par boil for 5 minutes or so (don't let them get too soft)
  • Drain, then place on a baking tray
  • In cup mix a half teaspoon of Piri Piri (adjust to taste) with a ¼ cup of olive oil
  • Drizzle oil mix over potatoes
  • Toss the potatoes until well coated with oil and Piri Piri
  • Finally, cook in the oven for about 30 mins. until golden and cooked through

Easy Piri Piri Chicken
To make a super simple Nando's-style Piri Piri Chicken try this recipe:

  • Cut a few slices into 8 pieces of chicken (thighs, drumsticks). Add to a large pan of water and gently boil until just cooked.  Remove from pan.
  • Mix up a marinade of:
  • 2-3 Tsp of Piri Piri (adjust to taste)
  • 1/2 Cup of olive oil
  • 1/8 Cup of red wine vinegar
  • Splash of lemon juice
  • Some fresh thyme if you have it
  • Blitz the above.

(If you have time, put the cooked chicken in a bowl, coat with the marinade and when cool place in the fridge overnight to infuse the flavour).

OK, you have choices now. If you can, BBQ the chicken, this'll give you the best result.  Otherwise, remove chicken from the fridge, then preheat your oven to 200°C, pour the chicken and marinade out onto a baking tray and cook through until lightly golden.  Try serving with chips, corn on the cob and a salad.

Note that over time the essential oils, aromatics and colour of this spice blend will fade and the flavours change. Keeps for up to 2 years, but better when used sooner.  Please keep your pot in a cool, dry location away from sunlight and use by the BB4 date on the label.
