Bengali 5 Spice

Punch Puran is a Bengali spice mixture used to provide a base flavouring to many Indian recipes. It's colourful blend of flavourful seeds that includes fennel, mustard, nigella, fenureek and cumin seeds (we've used onion seeds in our blend as they seem to keep longer - if you'd like us to mix you a batch using Nigella seeds just drop us a line).

This blend is known under many variations of the name including Panch Puran, Panch Phoron and Bengali 5 Spice (along with Padkaune masala, Panch phoron, Bengali five spice, Panch phora, Panch puran, Panch poran, and Panchpur).

A delicious and appetite inspiring range of aromatics.  The flavours drift from one spice to another; each one coming to the fore at different times to offer a range of flavours that 'pop' far better than in ground blends.

This spice mixture isn't generally powdered though it can be put in a pestle and mortar, ground and used to season vegetables, stews and rice dishes. Try tempering this Bengali 5 Spice to create a flavoured oil for use in Dahl's (a tried and tested recipe here at

At home we infuse a bottle of olive oil with 3 tablespoons of Panch Puran to make a wonderfully flavoured oil for cooking, especially frying onions.


Try Aloo Panch Puran

1Kg of Baby Potatoes
½ Tsp Turmeric
½ Tsp Chilli Powder
1 Tsp Olive Oil
2 Tsp Panch Puran
1 Green Chilli, Fresh (optional)
Some sprigs of Corriander Leaf, Fresh

Saute the potatoes in vegetable oil until they are cooked. Add Turmeric and Chilli Powder, stir and heat through, set to the side.

In a separate pan over a medium heat, add the oil and when hot add the Punch Puran. Heat until seeds start to crackle and pop and the wonderful aroma is released. Add 1 finely chopped green chilli (optional), and about a tablespoon of chopped fresh coriander. Mix through then pour on the potatoes in the other pan, and serve. Quick, easy, delicious!

Over time the essential oils and aromatics in your spice blend will fade and the balance of flavours change.  Though they may keep for up to 2 years in an airtight container in cool, dark, dry conditions, we suggest that they are typically best within 6 months of delivery. Please use by the BB4 date on your package.
