Oregano has a pungent and lightly citrus aroma and a slightly bitter taste; reminiscent of Marjoram but 'punchier'. Oregano is often used in Mediterranean and Tex-Mex dishes including chilli con carne, fajitas, tacos, on pizza and with tomatoes and tomato sauces, with meat and poultry, eggs, cheese and fish.
Oregano's flavour can diminsh in cooking; unlike most dried herbs that would be added earlier in cooking, use Oregano add mid-way.
A kitchen essential, Oregano works alongside Rosemary, Thyme, Garlic and Coriander.
