Za'atar is a simple blend of thyme, sea salt, sesame seeds, and dried sumac. This seasoning blend is used extensively throughout Middle Eastern cuisine and makes a great blend for use with red meat, fish and poultry.
Use it as a seasoning atop flatbreads, make a side dish with Zaatar, chickpeas or lentils, sprinkle over your favourite roast vegetables or try over plain yoghourt or creme fraiche and drizzle with olive oil for a terrific dip! Zaatar also makes an original herb crust for pork.
Za'atar seasoning is fragrant, aromatic, tangy and with a nutty edge.
1-3 Tablespoons of Zaatar Spice
300g Cherry tomatoes
4 Naan breads
Half or quarter the cherry tomatoes, sprinkle with a tablespoon of the Zaatar and taste test, adding Za'atar until you are happy with the flavour. Pile the tomatoes upon the flatbreads and serve. A drizzle of olive or sesame oil is a nice touch.
