Simplicity before authenticity again my friends!  Home from work and straight to preparing dinner with ingredients you'll normally have to hand. This version of Massaman is super simple and will add a Thai-style sweet, hot, flavour to your evening meal.



500g Stewing steak, cubed
2 Tbs Coconut oil
2 Tbs Spicewell's Massaman Curry powder
2 Potatoes, peeled and cubed
200ml Coconut milk;
200ml Stock
1 Tbs Brown sugar
½ Cup unsalted roast cashews



Heat the coconut oil and sear beef on all sides, set aside.

Add Coconut milk and Massam Curry powder to the pan, bring to a simmer stirring constantly.

Return beef to the pan and add stock, sugar and cashew nuts, cover and simmer for approx. an hour and a half.

Remove lid, add salt to taste, and simmer for about ½ hour until meat is melt-in-the-mouth tender and the sauce has thickened.

Serve with rice
