Simple Sambar Rice
Spicy, easy to make and full of flavour - could make a great addition to your curry repertoire?!
Run the lentils and rice under the tap until water runs clear. Add to a pan with 1½ cups of water, cover and cook until the rice starts to break apart (stirring occasionally). Melt butter in another pan, fry the curry leaves until they pop and sputter, add the onion and carrots, saute for 2 mins, add tomato and Sambar blend, saute 3 mins. Add ½ cup of water and cook veg' until is soft. Add cooked rice and split peas, heat through.
