Kohlapuri Chicken Curry

Kohlapuri Chicken - a sweet, nutty chicken curry.

A delicious Indian dish that is made quick and simple in this recipe.

For the marinade:
750g - 1Kg diced chicken breast
100ml of yoghurt
1 Tsp Turmeric powder
1 Tsp Bassar masala
2-3 Cloves of garlic
a pinch of mango powder

For the Kohlapur masala:
2 Tsp sesame or olive oil
1 Medium onion, finely chopped
3 Tbsp Spicewell's Kohlapuri curry blend
1-2 Tbsp desiccated coconut
1 Large tomato, chopped
a pinch of mango powder

To Finish
Fresh coriander

Make a marinade

Press/finely chop the garlic cloves then add turmeric, bassar masala, salt (to taste), and a pinch of mango powder to the yoghurt. Use a teaspoon of lemon juice if you do not have mango powder.

Add the diced chicken and marinade for 1 to 24 hours.

Make a simple curry base

Heat the sesame oil in a pan, add the finely chopped onion and saute until the onions are translucent.

Add the coconut and chopped tomato and saute for about 10 minutes.

Allow to cool then blend with a hand blender.

Make your Kohlapur Chicken Curry

Heat 2 tsp of oil over a medium, add the marinated chicken, the Kohlapuri blend and cook, stirring frequently for about 20-25 minutes or until chicken is cooked through.

Add your curry base and a pinch of mango powder (don't add too much or your curry will be tart, if you used lemon juice in the marinade you will not need to add mango powder). Cook through for about 5 minutes.

Serve with rice and garnish with fresh coriander.
