Grilled Baharat Chicken

A superbly simple recipe that is prepared quickly and easily - perfect for hot, sunny, summer days.

4 Skinless chicken breasts, cubed
3 garlic cloves, crushed
2 Tbsp Olive oil
1½ Tbsp Baharat Spice Blend
Pitta breads, fresh coriander, juice ½ lemon and plain/Greek yoghurt to serve

Cut each breast into 1½" cubes and place in a bowl. Add the garlic, olive oil and Baharat spice to the chicken and mix well.  Leave to marinate in the fridge for 1 to 6 hours.

Thread the meat onto the skewers, alternating with onion and/or pepper chunks. Ensure the skewer is packed quite tightly.

Grill on the BBQ on low to medium heat until cooked through. Alternatively, heat the oven to 220°C (gas mark 9). Sear the skewers in a hot frying pan, then transfer to the oven. Roast until golden and cooked (approx 15 mins).

Rest chicken for 5 mins., then squeeze over the lemon juice. Serve in pitta bread with fresh coriander, yoghurt, and salad.
