Treat yourselves to a tasty tandoori that's super easy to prepare and make with ingredients typically to hand.
- 4 Chicken thighs or 6 legs, skinned
- 250g Greek yoghurt
- 1 lime (or lemon)
- 2 cloves crushed/pressed garlic (or ¼ tsp dried)
- 1-inch piece of freshly peeled and grated ginger (or ¼ tsp dried)
- 1 tbsp tandoori massala spice blend
- 1 tsp garam masala
- ½ tsp turmeric
- 1 tbsp olive oil
- Coriander to dress
- Salt and pepper to taste
To make the marinade pour the yoghurt, spices, crushed garlic, grated ginger, olive oil and juice of the lime into a bowl and mix well
Add the chicken to the marinade and leave for 2-24 hours; the longer the better
Move to an oven proof dish, preheat your oven to 240°C, cook for 30-45 minutes until the chicken is cooked through
Garnish, season and serve with rice, naan and a salad. Very simple. Totally delicious.
