Chicken Jhal Frezi

Among the UK's favourite Indian curries (as you may know, we do like a curry), Jalfrezi is a spicy, colourful and flavourful dish that is easy to prepare and cook.  

Here's a simple recipe to try:

2 tbsp vegetable oil
1 large onion, peeled, finely chopped
2 cloves garlic, peeled, sliced
4-6 teaspoons of Jalfrezi Curry Blend
pinch salt
750g/1lb 10oz skinless chicken breast, cut in 1" cubes
400g tin chopped tomatoes
2 tbsp melted butter
1 lemon, juice only

Heat the oil in a pan and fry the onion and garlic over a low to medium heat for 4-5 minutes, or until softened (translucent in colour)

Place the Jalfrezi Curry Blend in a bowl, add the chicken pieces and mix well to coat (if you have chance to prepare in advance then use 3 teaspoons of Jalfrezi as a dry rub)

Place the chicken in the pan and fry for 10-15 minutes, or until golden-brown and cooked through.

Stir the tomatoes into the pan, reduce the heat until the mixture just simmers. Cover the pan and cook for 20-30 minutes. Stir occasionally and add a tablespoon of water as required if the sauce looks too dry.

Stir in the butter and add the lemon juice, to taste.

Garnish with fresh coriander and serve with rice, chapatis or naan.
